For the Hub Transport server role you don't need to do anything for the actual Exchange comms between the mailbox server role and the Hub Transport role as load balancing and high availability is automatically built in. For the Client Access Server role you install multiple CAS servers and load-balance them with WNLB or a hardware load balancer. This action will create a failover cluster for you I wrote a basic article (link below) that should help you understand DAGs. If you need high availability for the mailbox server role, you create a Database Availability Group (DAG) and put the mailbox servers into the DAG.

Generally, the Unified Messaging server role will be on a separate server for performance reasons and also if you plan on virtualising the other server roles, as the UM server role is not supported as a virtual server. The only exception is the Edge Transport server role that must be installed separately from the others.
